My garden wasn't great this summer due to a cold, rainy spring that messed with germination and seedling survival. However, I did get an amazing crop of cinderella pumpkins. (Rouge Vif dβEtampes) They are huge and take up a fair amount of room to store. I baked one up to see if it is worth it dehydrating and powdering the puree. Turns out more than half a huge pumpkin makes about 1 cup of powder. Incredibly space saving but will have to get back to you on whether it is good re-hydrated. Meanwhile, I saved some puree to make this yeast bread. It's so delish!
