Apple mail on iOS and iPadOS has an “All Junk” mailbox now! I’m not sure whether it was included with 18.0 or with 18.0.1, but it’s here 😀.

There doesn’t seem to be a special setting, like for the, e.g. the “Archive Mailbox” for GMail to specify which mailbox is the “Junk” one, but it could be available only on certain accounts.
