I decided to reporpose the leftover Vietnamese pesto and marinade some sliced tofu in it for 3 days, then soy garlic marinaded and sautéed some thin sliced oyster mushrooms, pickled some shredded daikon and carrots, then sliced up some cucumbers, jalapeños, and red chili peppers, then layered those all on a lightly toasted baguette to make an pretty damn incredible vegan banh mi for @sebalicious and I to devour at our favorite local brewery! No ragertz only nomz 🤤
