Virtually all restaurants that I have tried in my area serve the same Sysco french fries: unnaturally crunchy, blatantly ultraprocessed, with no natural flavors whatsoever. A profoundly disappointing eating experience every time.

My dad was a top research chemist, and he told me long ago that the fast food chains used chemical processes to subtract all natural flavors from their food, particularly their french fries. They then added chemical flavors to give them a standardized taste. Those chemicals were manufactured at large factories in New Jersey, he told me.

Of course back then local restaurants would still make their own fries, mostly. Only the fast food chains had the money and the will to standardization to develop and use those standardized chemical flavors.

But Sysco has changed that. I can now name exactly ONE restaurant which makes its own french fries the old fashioned way, by slicing potatoes and frying them in oil or fat. The taste and texture are simply incredible. It's a huge chicken restaurant, and I don't eat chicken, but I go there and order the fries and other sides to go. They're very successful, so I'm hoping they will stay in business a long long time!
