#SundaySlice this week is actually a bit of a special one. I was going through the list, and read this recipe and recognised it immediately as the one my mum always used to make for our school lunches. It is a super easy one, basically you mix everything in a bowl and press it into a slice tin, bake it and ice it.
Our family called it "fudge" *narrator's voice * it is not fudge. It's semi-decadent, with just enough nutritional value to be approved by my child-health-nurse mum, but enough sugar and chocolate to be approved by child me.
Subs and add-ins are the order of the day, it's such a basic recipe that you can go nuts with it. This one has sultanas because my mum always used to put in about half a cup of them, and cranberries because I saw them in the cupboard when I was getting out the sultanas. Also swapped half the flour for almond meal, used dark Dutch cocoa, not that Cadbury shite, and put melted cooking choc and butter in the icing because I can do what I want now because I'm a grown up. And I licked the mixmaster beaters.

The #SundaySlice was a bit late today, owing to me making #kimchi as well. I've never made kimchi before, and it's kinda terrifying to just shove a bunch of cabbage in a jar and then leave it out to ferment. I'm not 100% sure that I'm not going to just end up with poisonous slime. So for the slice I went with a trusted old recipe. This is from the wonderful Woman's Weekly biscuit and slice book. It's in the "healthy" section, and true enough, unlike most slices and biscuits doesnt contain truckloads of butter, and is kinda high in protein. I used to make it for kid's lunchboxes, where it got eaten, but was by no means a favourite. Too healthy. It's quite middle eastern tasting with the sesame, I usually add some tahini to it but the spot at the back of the fridge where the tahini jar lives was empty. I also add baking powder to make it a bit lighter. I remembered as I was putting it in the oven that subbing some honey in for the sugar is nice. Next time.
