The audience at Cables of Resistance (the movement conference against Big Tech) just celebrated this talk by Simone Robutti from the Tech Workers Coalition:
Reverse engineering to support workers rights
Their basic approach is to reverse-engineer workforce apps (with cooperation from workers) to find out if they send surveillance (or other illegal data) to the companies. If they find evidence, they try to push data protection authorities to have a look at those companies' servers.

Heres is the talk abstract:
We will present how technical investigations of mobile apps and websites can help platform workers to identify labor rights and privacy violations.
Reversing.works is an organization developing a reproducible methodology to investigate the software used by platform workers. The goal is to find evidence of labor rights or privacy violations to help the workers build legal cases against their employers and fight back against algorithmic surveillance. Not only that, this kind of investigations can help understand the logic used by their employer to control, direct, punish or reward the workers, allowing them to build countermeasures.
In our talk, we will present the context of the problem, how we perform investigations, and what an organization would need to start performing similar investigations.
