So, went to standalone #Gemini to see if there's a workaround. Initially, it suggested I scroll through all my albums to find the ones I want. After I pointed out that the target albums were created over a nearly decade-long span and are a handful of albums out of literally hundreds of albums, it provided guidance on how to turn off the Gemini features in Photos.
On the plus side, I have legacy "dumb" search back. On the minus side, even dumb search has been updated to block certain terms — like "sex" — from indexing ...and as an embedded feature, there's no way to turn off "safe mode".
So, when I responded that these safety features mean that accessing specific sets of photos is broken, it suggested that self-hosting (specifically via #Immich) or using a service like Ente Photos might solve my problem (it even cited others' experiences similar to my frustrations as a contributing factor to why others have hopped on the "de-Google your life" movement).
So, Google's "AI" is (whatever the #AI equivalent of) "aware" (is) that Google's #enshittification of their products is causing people to abandon Google.
