Oh my, I made Chef John's lentil gumbo¹ last night, and it was incredible! So very savoury and moreish!
I don't yet understand *why* it was so good. Normally I understand where all the flavours come from in the food I cook, but this was using new ingredients in new ways, and so it still feels a little bit like magic. I think the paprika is doing some extra heavy lifting.

Been a minute because I've been sick, and didn't make it outside today, but I did bake "salami bread." Let you know how it tastes in a bit. Chef John says cool completely, but something tells me the family won't wait.
