#foodwin Making chicken stock with leftover chicken carcass, odd bones & skin from today’s very successful roast lunch with a friend. I bought a 1.4 kg bird and it cooked perfectly with crispy skin top & bottom in the 1300 watt glass benchtop halogen convection oven. I’ll definitely do that again, I had some root vegetables in the bottom of the oven on a few sheets of thick foil which made it easy to lift out the vegetables and decant about a cupful of cooking juices which in turn made an excellent base for a gravy.
