I got out all my games. I thought I owned all of the PS2 era, but I guess not! (And, yes! The discs are actually in the cases!)

I did a poor job of developing the dough last week, so it sagged a bit.

I froze 1 of the loaves, which was this one. I find that the thawed loaf never gets as big as it could have. I've tried a few approaches, including letting it bulk ferment for a couple hours before putting it in the freezer, and letting it thaw 12, 24, and 36 hours. The only thing I haven't tried is using extra starter, but that's because I usually make 2 loaves and only freeze 1.

The slicing pattern didn't give the exact result I was going for, but I'm still pretty happy with it. I think the dough was underdeveloped, which caused the explosive growth. I bet it's still yummy, at any rate! #Sourdough #SourdoughBaking #TartineBread
