@bbq Marinate the chicken thigh chunks in pineapple juice from a can of pineapple chunks. At least an hour. Remove, boil the juice and let cool. Thread on skewers with red bell pepper, cremini mushrooms, and pineapple. Mix the juice with sweet BBQ sauce, homemade or store-bought. Grill and glaze with the sauce. Serving with cumin/turmeric rice tonight.
