

🙈As usual, for my daughter's playdate lunch, I made some of my "Malaysian fried chicken". Apparently there's none left, so I should share the recipe:
Trim and cut chicken thighs into strips, marinate with ginger, garlic, lemongrass, fish sauce, soy sauce, and palm sugar. Ratios are fuzzy, you'll figure it out.
After at least 12hrs, strain. Mix flour and some Malaysian curry powder (I use hot baba curry powder). I always think I use too much, but it turns out great.
Coat well, pressing in, and making sure everything is well coated. Rest for 30 mins.
Fry at 165°C. Serve.
Goes well with rice, or just on its own with a good sweet chilli sauce for chicken
