@boozyANDsour I did 8 sliced in half (with seeds) Thai chilli Chili peppers, 2 cups of water, 3tbs of white vinegar, 2tbs of salt, one close mashed garlic, a pinch each of sugar, thyme, rosemary, and whole black peppercorn. The water, salt, and vinegar I put on medium heat on the stove until the salt dissolved, combined, & let that sit in a sealed mason jar for about 24 hours (minimum). I think in hindsight, I'd consider more salt if you want that similar tartness that you get from olive brine.
