Have not done Epi in a while, i love the additional crunchiness compared to baguettes,and they are so easy to do.
For one of the breads I used figs. they were dried from the fridge, i microwaved them for 1 min before putting them in the dough. maybe a little big in the end, but they taste good.

@dnc not an expert, but could it be that you cut orthogonal to the dough surface? try to cut with a 45 degree angle.
@dnc i would scrub with water and then let dry again... worked for me in the past...
@wolfgangcramer thank you for sharing, i did not realize they had special prices for 60+ folks. For your other followers: For non EU citizens there is Eurail for euro wide travel. Also, if you want to travel in a country that you are not a resident off check out the destination rail networks, i have used a german rail pass a number of times (bought on arrival at airport)
