Difficult to find these in the shops so had to stock up when I got the chance. There's at least one Co-op near me that has them but apparently Waitrose stock this brand too

It might technically be a fruit, but the aubergine is the greatest vegetable of all. Some recipes I post might not be strictly #vegan but will always be easily veganisable eg substituting yoghurt for vegan yoghurt etc
More brinjal pakora with a tamarind dip from Namaste in Inverness, Scotland. Ended up taking half of them home to augment a curry at home the next evening
Aubergine bagel - curried aubergine, vegan feta, beetroot hummus, pickled onion, kale, tahini with parsnip and beetroot crisps. Bit of a logistical challenge to eat but it was tasty!
