More brinjal pakora with a tamarind dip from Namaste in Inverness, Scotland. Ended up taking half of them home to augment a curry at home the next evening
Aubergine bagel - curried aubergine, vegan feta, beetroot hummus, pickled onion, kale, tahini with parsnip and beetroot crisps. Bit of a logistical challenge to eat but it was tasty!
