@AngryAnt @cadey thanks a ton for that, the suggestion you had was what lead me to the search query that turned up this log, and helped me narrow down that the entire user process was getting killed. I had gotten similar useless "idk sounds like oom killer" on discord as well (despite making it clear this was on very high RAM systems and there was nothing in the logs about oomd kicking in) and was preparing to post on the discourse too.

@cadey This is a pretty crazy ass connection if true, did you use the username "Cadey" in 2020 on the the #nixos channel in libera?
If so, I just got bitten by the exact same misconfig as you did, I just spent about 10 hours over two days trying to figure out why my user process was getting sigkilled during nixos rebuilds and finally after basically just typing word salad into Google ended up at this years old irc log of someone with the same issue: (at 01:05)

If your user is in "nixbld" group it gets killed as cleanup.
