If you have a serial cord of some kind so that you can grab it as text on another machine, that'd be awesome, but I get that that's a lot harder

Perhaps with #AlpineLinux? It has a native x86 port, and uses resources sparingly, AFAIU.
However, there may occur problems when compiling software by yourself because it uses musl instead of glibc.
@lupo Alpine is a good choice.
