There doesn't seem to be a lot of browser options left in #FDroid anymore. Does anyone have any suggestions for one that I can at least run ublock origin in?

Yep, you can use either the qr code or manually enter the repo address.

No, AFAIU. It is (only?) available as binary release at its GitLab page:

https://gitlab.com/ironfox-oss/IronFox/-/releases

You can maintain its installation on your device with Obtainium:
