Trying to judge when the first pomegranates will be ready for picking:

"Pomegranates in Australia are generally ready to pick in autumn (March to May), when they turn a deep red, feel heavy, and transition from round to a more angular, flattened shape. They will not ripen further after picking, so let them mature on the tree until the rind is matte rather than shiny. A metallic, hollow sound when tapped indicates they are full of juice."

Almost dried. I am air-drying them as they don't take too long. Bay leaves are tough so it can be hard to know when they are dehydrated. Once they feel leathery, they are done.
