I attended a training in The Hague last week & the guy who runs the location provided a lovely Dutch lunch - freshly made soup, warm bread, cheeses + spreads.

I loved the courgette/zucchini, mint & chili soup (chili & the mint play so well off each other!) so much that I ended up asking for a recipe - and made it today, with some fresh Lidl bread (one of the best breads you can get in NL imho).

Definitely something we'll be adding to the rotation!

@afewbugs the one I used (I got a rough explanation from the original cook, not a full recipe): 4 zucchini, 3 potatoes, 270 ml can coconut milk, 1.5 l water, fresh chili and mint to taste. Cook sliced zucchini, potato in small cubes + slliced chili, in the water + coconut milk + vegetable stock powder until the veggies are soft. Add the mint, cook another minute, blitz until smooth. Taste was great, the consistency a bit watery - I'd rather reduce the water next time.
@afewbugs oh and the only spice I used besides the stock was pepper, mt stock was pretty good, I think.
