We have shortbread cookies but I've never seen a longbread cookie. I feel like it should be a sweetened baguette or similar?

@jpm i was thinking more like the German pastry, i forget the name, that is like 10x as long as its diameter and filled with vanilla cream.

A cookie like texture in that form factor would definitely be longbread
