I don't like fried battered foods, so I just pan-fried the shrooms instead of coating them in flour and deep-frying them. Also I kinda messed up the rice, so I hid it under the cashews. If you have a South East Asian auntie (F/M/X b/c I'm told that "auntie" is a state of mind) willing to yell at me about how to cook rice properly, you have my handle.

I had a craving for lemon grass, so I bought it to experiment with a lemongrass version of the sambal, but then I forgot, so I guess I'll use it for tea.

@anna @irfan That actually looks really delicious! Usually the cashew nuts are chopped until it’s sauce-like over here but that’s always up to personal preferences.
