Making a huge pot of #Vegan Porotos Granados stew. A thick Chilean soup/stew consisting of squash and beans with garlic, onions, sweetcorn, French beans and a mix of herbs and spices.

Just the thing for when the weather turns a little wild and cold again

I mean, it's not "Strictly" Porotos Granados as I'm not using cranberry beans but pinto beans.

But it's a thick, tasty and warming bean and squash stew that will feed us both tonight and once divides into tubs will freeze and do us for a couple of other nights too.

The squash has broken down making the stew thick and tasty. Still some lumps of squash and beans so it's not all a homogeneous mass.

Added the French beans corn let it simmer for a few mins longer. Then let it sit and rest and warm it up again before serving.

It's a stew that improves with sitting.. up to 24 hours if you're patient. We'll eat this in about an hour or so. #vegan #vegetarian
