It was sourdough discard day. A blueberry clafoutis and some crumpets baked in a bun pan. I gave my sister some frozen blueberries and realized there were some in the other freezer too so I doubled hers up and used 4+ cups in a clafoutis.

The crumpets are just starter with a little sugar, salt, and baking soda. King Arthur recipe. I found it's easier to just bake them in a pan than mess with the metal rings I have.

It's funny, I haven't baked any actual bread in ages, but I keep my whole wheat starter going just because it gives me an excuse to use the discard for waffles.
@TheGreatLlama I'm guilty of that. Less than a loaf per week from it. Lots of waffles and sometimes pancakes but that's a little more cooking effort.

I'm sure I'll get back to actual baking at some point. As it is, if I keep the starter chilled in the fridge, all I have to do is remember to make waffles once a month or so. And when I finally do get back to it, I have that complex, mature starter waiting. It's surprisingly resilient stuff.
