Interface elements that would be hidden if there were no ad blocker are not saying they can detect your ad blocker, they are offering a widget for you to tell them you have an ad blocker.

Don't click those widgets, block them.

To be honest, I do have a very effective mental adblocker. Maybe they are detecting that?

* I block certain trackers, so if they served non-tracking ads, then everyone wins.

Ad blockers are the little guy's self-defense. The fact that they are necessary is the fault of capitalism itself.
Often they don't know and will give that message even if you are not using any ad blocker.

I am not using an ad blocker; I'm using a tracking blocker. That they can't tell the difference says a lot about the ad industry.
