Having looked into this (a lot), the only things that I think comes close is focalboard.

I don't think it has e2e encryption other than that provided by tls, and I believe that all boards are either public by default - and visible to the server admin.

I'm not aware of any truly private by design task management system that scales to teams (it's something we've wanted to explore adding to Cwtch since the very early prototypes - but the problem space is a pretty big one)

Point 5 can be easily added via a community plugin, I remember trying a kanban board which worked really good.

For Point 6, It has checkboxes (Markdown) but you can make it even more robust with a plugin.

It's super customizable so the UI can be as cute as you'd like it. I've not used it in a while only because I didn't use it effectively and ended up spending all my time customizing all the things 🤣

@Em0nM4stodon I think AnyType comes closest to matching your requirements. Especially if E2EE and privacy focused are top priorities
