Baking up some focaccia this morning to have with dinner tonight and maybe snacking. I kind of made a lot.

@VermStudio one of the easiest breads to make, too! Highly recommend folks give it a shot!
- 500-600 g flour
- 75-80% of the flour's weight in water
- 2.5 tsp or 1 packet active dry or instant yeast
- 1tsp salt
Mix all but salt in a bowl thoroughly. It will be an ectoplasmic dough. Every 15 minutes, stretch the edges inward all the way around, lifting and folding onto itself, for a total of 2 hrs.
After that, let rest for like 30 mins and then heavily oil (with olive oil preferably, not extra virgin) a 9x13 baking pan or a half sheet pan for thinner.
Pour (or scrape) dough into prepared pan and spread to edges and allow to rest whilst oven preheats to 450Β°F.
After resting for like 15 mins dimple the dough with your wetted fingers and then whisk equal amounts oil and water (around 20g each) together until emulsified and then pour over top
Lastly, sprinkle with flaky or kosher salt, coarse black pepper freshly ground, and fresh or dried herbs and spices, before baking 20-25 mins.
It's amazing.
@VermStudio ACK I forgot to add: add the salt after mixing dough initially, then incorporate. Mix too early and it can kill a lot of yeast!
I used my stand mixer to beat it heavily for like 8-10 minutes before covering in a damp cloth and sticking it in my oven with only the light on for like 2.5 hrs. Light generated plenty of warmth in a cool apartment hehe.
