Today was shallot harvest day for me. Some of these are huge this year! I got about 5 gallons worth. They’re now on drying racks to cure. #gardening #culinarygarden #gardentotable #food
@timlemke I'm new to growing shallots and garlic. How long do you need to dry them, and what does the drying accomplish? Thanks!
@JonOfLodi drying them helps preserve them. Too much moisture and they will rot. But properly dried and properly stored they will last over a year. Dry them for at least a few weeks but also store them in a cool, dry place with plenty of airflow around them, which is kind of a continuation of the process. I use mesh bags for storage. Don’t store them in plastic bags, sealed containers or the refrigerator.
