Getting an early start on the wild garlic pesto this spring 🙂👍

Aka bear’s garlic, ransoms, buckrams, wood garlic, cowleekes, Bärlauch, wilde knoflook, & more, Allium ursinum makes a lovely alternative to basil, added garlic being unnecessary.

I’ll also pickle some flower buds when they sprout a bit later on.

And best of all, it grows all over the place here in the woods 😋

@andrealuck Wild garlic takes on a particularly vivid dark green when made into a paste & my fingers are a bit stained with it. The pine nuts & cheese add yellow & make it much lighter, as seen here. Very tasty it is too, with a bitter edge that I like 🙂
@markmccaughrean I’ll give it a try! I’m sure it’d be a great sauce for some homemade pasta! My favourite alternative to basil so far is rocket pesto 😬
