bread slices of tofu with flour, paprika, and everything bagel seasoning, then pan fry in a little oil
also, slices of portobello mushrooms can be seasoned with salt and pepper (though i really like harissa). then just cook them with garlic knob and sprigs of thyme in a frying pan with olive oil. be sure to give them a little color

Recommend "Rainbow Plant Life" website/YouTube and also Pick Up Limes. Both of those tend to delve into the healthy diet theme more than most if that's what you're looking for.
Some advice from someone who went veggie and lost a ton of weight, portion control is king, and making sure your plate is only a quarter to a third the "main dish" and the rest veg or side veg dishes is what really helped me
