Made Cinnamon Star bread this morning using #Wholegrains. Subbed one cup spelt flour and one cup whole wheat instead of all purpose. Didn't have any dried milk powder so used milk instead of water. Did the first rise at room temp, then shaped and put in the fridge overnight. Let it warm up 30 or 40 minutes this morning while preheating the oven.

OMG those look good! I love the nutty flavor whole spelt flour gives things.
@Coho I don't know how I only "discovered" spelt flour six months ago. I use it when I want something softer than whole wheat. Spelt crepes are great, but not whole wheat crepes.

spelt works great for chapatis too. I just read an interesting article, how spelt protein is different from wheat and doesn't need a whole lot of kneading to activate it. Im kind of addicted to spelt at the moment, started using it during the pandemic
