This ex malbec cask has been filled with our organic rye new make. The rye spirit was created from 51% malted rye and 49% malted barley fermented on a mead yeast for 14 days before being distilled through a whisky hood and 4 plate column. We expect to bottle this cask at 6 years in 2029.

By the way, I recently bought rye for the first time -I usually stick with bourbon. Dickles, and I like it. A touch less sweet that bourbon. Which ryes do you like?
