The fermentation house at Hampden Distillery in Trelawny Parish, Jamaica.

This is a very old building, and the blackened areas you see are microorganisms that live off of the vapors from the open top fermentation vats. Hampden uses no added yeast. It’s all done with organisms from the environment.
