#foodtoot Cube 100g smoked tofu, marinate in 1 tbsp tamari. Fry 5 mins in 2 tsp sesame oil. Set aside. In a pot, fry a diced yellow onion, 2 minced garlic cloves, grated knob of ginger 5 mins in 1 tbsp sesame oil. Add 1 l veg stock, 1 winter carrot, 300g celeriac, both peeled & chopped, 15g dried mushrooms. Simmer 15 mins. In a bowl, mix stock w/ 2 tbsp white miso paste into a slurry. Mix it in. Add handful chopped spinach, tofu, cooked soba noodles. Garnish: spring onions, toasted sesame seeds.
