I have learned many, many things in 2025, but my favourite must be the cartouche. Cut baking paper into a circle smaller than your pan and place over the food. Locks the heat in, blocks spatter, and lets the moisture evaporate. Pure culinary magic!✨ #cooking #cookingWithBenny #cartoucheMFs

I would do a proper #cookingWithBenny, but it was too hard to juggle timings of multiple side dishes and a roast, gravy, roasted + mashed potatoes (because 13yo leans into her Irish heritage), and also take photos. Trial run for Christmas dinner.
