I made this awesome sausage and white wine ragu last night. No photos, but it was amazing. A bit like bolognese, but with sausage meat. I added some sage during the cooking process which gave this massive herbal hit πŸ˜™πŸ‘Œ

I'm trying out different levels of caramelisation. This one was in for a bit too long. The confit came out sticky with the consistency of an olive tapenade or sun-dried tomato paste. Really intense, nutty, slightly sweet flavour. I think it'll go great on sandwiches. #cooking #cookingWithBenny
