After a weeks steep in white rum my cinnamon infusion is near its desired tone. The smell is amazing. Made the cream of coconut (1-3/4 sugar to one can coconut milk and a pinch of salt to stablize in a pan until blended). Next up the blender! Oh I can’t wait to see how this comes out! Started the cinnamon infusion soak for my Christmas batch of Coquito! First time making it and I went 1-1/3 cup Bacardi Superior then finished it off with 1/4 Wray overproof. Homemade coconut cream will be made Saturday to all come together Monday for festivities! #coquito #bemerry #cocktail
