Spent a part of the morning preppin', choppin', cuttin', peelin' and assemblin' a pot o' tofu vegetable soup. I got a bit carried away and now have a pile of napa cabbage, bok choy, cauliflower, and extra zuchinni on the counter with no room left in the pot!
Been slowly cookin' it down for a few hours. Given a few more, I may be able to add some more of the extra stock and reload the pot. #Soup for the rest of the week.
I kind of like how it's flavor will transform over time as more/new ingredients are added.
