#Matcha is made by stone-grinding #Tencha leaves (shade-grown, unrolled tea) into a fine powder. Unlike other teas, it’s not steeped but whisked with hot water using a bamboo whisk (chasen) to create a light foam. There are many types: single-cultivar or blended, for usucha (light tea) or koicha (thick tea), culinary or ceremonial. Matcha is pure umami, with an extremely rich and intense aroma.
