The Poor Prole's Almanac

The pastures have rested and the animals are out in the field again, which means a daily hike around the #farm and all-weather milking for the next two months or so.

I've been working my way through the pig fat in my freezer, rendering lard and making chicharrones. Pigs are a staple on our farm. They not only help us till the soil, control grass, and fertilize - but they also provide the main source of protein and fat for our diet.

These pigskins will be strained out then put in the air fryer, where the last lard will be drawn out and they will puff into the most delicious of snacks. 🤤
