On Sunday I made some cupcakes and icing from scratch using a recipe from 1828. I used a hand-cranked mixer for over an hour to make the icing. ๐Ÿ˜ฃ They turned out well, but very gingery. If I make these again Iโ€™ll need to make some modifications. ๐Ÿค” #cupcakes #oldrecipe #baking #dessert

Oven 325ยฐF

1/2 c butter, melt in 8โ€x8โ€ pan in heating oven

In large bowl, mix:
2 c oatmeal (large flake &/or quick)
1 c brown sugar

Pour melted butter into the dry mixture and mix well.
Press into the 8x8 pan with spatula.
Bake 12 - 15 min. until edges are golden & centre is slightly soupy looking.
Cool 15-20 min. but while still warm cut into small squares (5 cuts each way).
Cool completely, then cut again.

Momโ€™s recipe 1939

1/2 lb sliced side bacon
1 onion
1 clove garlic
1 28 oz can tomatoes
1 cup corn (frozen or canned)

Cut bacon into 1โ€ pieces. Brown in large pan. Remove. Spoon off some fat. Fry chopped onion in bacon fat. Add chopped garlic for a min. Add chopped tomatoes, scraping brown bits from bottom of pan. Add salt, pepper, bacon, dried basil (to taste). Simmer/low boil for 45 min to thicken slightly. Add corn for last 10 min. Serve in bowls.
