I'm not sure it's a sunk cost fallacy exactly. I suspect the companies and investors involved are just _that_ desperate for another avenue for further expansive growth.
To an extent, these companies have all reached the point where they "must run as fast as we can, just to stay in place," so to go anywhere (and meet the expectations of their investors) they now need some way to run twice as fast as that, and AI looks like their best (and maybe only) bet.
