Unpopular opinion:
Old local varieties have little future. 😬 Maybe by moving them all a couple of hundred km north, but our traditional landraces weren't made for this.

Ok, maybe in *some* cases, the innate robustness will help them to cope with heat and drought, but we need to work on the issue quick.

(Modern cultivars aren't adapted either, but there is less of a stake in maintaining them in a certain geographical region)

Spring heat while peaches were in bud, 87°F, left 3 tree with only 4 flowers between them. Miraculously 2 peaches grew. The summer has been massive amounts of rain and humidity. Blueberries and pears love it but nearly everything else has rotted. Overrun with voles and squirrels last year. This year only a couple squirrels but more rabbits. Also pines have tons of pine cones.

I have a huge surplus of #sunchokes so I’ve been looking into ways to use it. I made chips, dried some and powdered it as a flour additive, froze some, and lacto-fermented a batch.

The brine from the lacto-fermented is a yum probiotic— perfect for adding to soda. I also harvested yeast to make a sourdough starter. The smaller leaves are tasty. This is a plant that will be ok in most places even through climate changes.
