Have been a bit AWOL on here as had hideous eye infection last few weeks. 3 lots of antibiotics and two trips to Eye Hospital later and it’s finally gone hurrah! Making Pav Bahji tonight. This thick veggie curry will be mashed a bit with some butter then slathered between toasted buttered soft rolls with coriander and red onion. Pure comfort after a hectic stressful end to the week. Recipe from Made in India by Meera Sodha is an absolute Banger.

The finished pickled onions. Should be ready to eat in 6-8 weeks. So glad the onion peeling horror is over for another year 😆

Hateful task tonight, peeling 4kg tiny onions ready for salting, then pickling. Every year I forget how bad it is. Yes, I blanch them in boiling water but not sure it helps that much.
