I'm in the process now of modding an original Zune to improve the battery, capacity, and add Bluetooth. The Zune discord has been helpful for me and reasonably active, so you may be able to get help there too if you need it.

It is done. My quest to get a scanner to working over iSCSI is complete.
I can now safely claim that Chris on SuperUser is wrong. There is nothing stopping you from having scanners running over a storage network.
