One of my Christmas traditions since I was a little kid is making chocolate fudge (with and without nuts). I think I've done this every year since... since I can remember!
Three things that have upped my fudge game recently:
- Doing it on the stove (I guess microwave was safer for a kid but sheesh!)
- Buying decent baking chocolate
- Getting a candy thermometer rather than relying on time

I finally made proper caramel for the first time last night! It’s somewhat terrifying not stirring the sugar at all while it caramelizes, but the result is delicious 🤤
