Caponata on Fennel Seed Rye Bread

Summer means eggplant and caponata is a wonderful sweet and sour relish. Here I used diced eggplant, tomatoes, garlic, celery, black green and Ligurian olives, capers, sugar, parsley, basil and red wine vinegar. For the bread I used crushed fennel seeds, my sourdough starter, rye and artisan bread flours.

Mahlepi, mastic and lemon essence representing the white stripe but looking more beige or yellow

Cantaloupe, green food coloring, fiori di Sicilia and coconut sugar
