@joshdm, @marcoarment mentioned this, saying that the setting reverts / forgets his selection(s) on a regular basis:

@Gte You're welcome :) They don't make it intuitive so I imagine you aren't alone on this one!
It might have worked in the past (I'm running iOS 26.1) but tap-and-hold only works for Audio, not Dictation.
@Gte Testing on iPhone. I am able to make Messages switch back from the Audio icon to the Dictation icon by dictating a message: Bring up the keyboard → tap the Dictation icon at the bottom-right of the screen.
