@BGMcKay only 40g of starter with over 900 g of flour. Mainly bread flour with a little whole wheat. Love wild yeast.

I retired, effective 2/2/23. Strange experience. I’ve worked for 60 years and now I wake up, company phone wiped, laptop and tablet wiped. New chapter, new adventures. Wish me luck.
