Strain into a saucepan through whatever kind of sieve you’ve got and warm through. Adjust seasoning with more ground cinnamon and salt as need.

Extra credit (worth it):

Serve with a handful of toasted pecans or walnuts and some banana sliced into coins both dressed in good maple syrup. Garnish with a bitter green like micro red sorrel or watercress

@murtaugh Halve the squash lengthwise, scrape out seeds and surrounding fibrous bits with a spoon. Coat squash with neutral oil or ghee, season with kosher salt and roast face side-down on a lined sheet pan at 375 for about an hour and ten minutes with half a stick of cinnamon in either cavity. Once cool enough to handle, scoop and purée with a cup of water and half a cup of crème fraîche…
